Frijoles! Soft black beans that are flavorful and fiber-ful

Black beans are a great source of fiber, protein and iron. Babies love them. We love them. The trick to making everyone in your house love them? Make sure to add some oomph! Once your beans are tasty, pair them with whatever you want like avocado, quinoa, brown rice, mangos, spinach, or pears.

  • 1/2 cup of beans
  • 1/4 small red bell pepper
  • 1/4 small green bell pepper 
  • 1 tsp minced garlic
  • 2 tbsp of chopped onion 
  • 1/4 cup crushed tomatoes 
  • 1 1/4 cup of water 
  • Pinch of cumin
  • Pinch of cilantro (optional)

Instructions

Instructions
  1. Soak 1/2 cup of beans in water overnight.
  2. Use a food processor or blender to finely chop red peppers, green peppers, garlic, onion, a tiny bit of cilantro (optional), and tomatoes.
  3. Bring water and beans to a boil.
  4. Add food processor/blender mix into the pot. Add cumin. 
  5. Lower heat, cover pot and simmer until very soft (about 35 minutes).
  6. Cool and serve whole or mashed. 

Notes:

Once your beans are ready, pair them with whatever you want like avocado, quinoa, brown rice, mangoes, spinach, or pears.
