Fresh and healthy doesn’t always mean expensive and time consuming and that’s why this recipe gets two thumb up from us!

Did you know that with two simple ingredients (a banana and some eggs), you can make a delicious pancake for your babies?! I know —seems crazy — but it’s true. These pancakes taste like banana, which we see as a good thing, and they are as pancake-like as pancakes with many more ingredients.

The key is the keep them small, butter/oil the pan properly and give them time to cook all the way around the edges before flipping.

FOR AGES: 6+ months This perfectly simple gluten-free pancake recipe is a fantastic option for a decadent breakfast without common ingredients that may contribute to an irritated stomach, like wheat flour, butter, and highly-processed sugary syrup.

  • 1 banana
  • 1 egg
  • ⅛ teaspoon salt
  • 1 tablespoon butter or coconut oil, divided
  • Optional: 1/2 teaspoon vanilla, 1/4 teaspoon cinnamon

Instructions

Directions
  1. Mash banana in medium bowl.
  2. Whisk in egg, salt and optional vanilla and cinnamon till fairly smooth.
  3. Heat half of the butter/oil in a skillet over medium heat.
  4. When bubbly, pour in pancake batter to size as desired (suggestion 2 tablespoons at a time).
  5. Let cook for approximately 4 minutes, or when edges start to brown.
  6. Flip and cook for another 3-4 minutes.
  7. Repeat steps 3-5 until all batter is cooked, adding more butter to skillet as needed to prevent sticking.
